The Bijou Bistro is an entrepreneurship created by Bijou students Lowell and Keith through the ACE class.  The students are learning to run a business, manage finances, keep track of inventory and records, and perform all the other aspects necessary to run and maintain a successful business.

The ACE class enables other student-run entrepreneurships such as a pottery business in which students paint and glaze pottery which they sell.  These students also learn to run a business, manage finances, keep track of inventory and records, and perform all the other aspects necessary to run and maintain a successful business.
